Zucchini Pizza Casserole

Ingredients:

  1. 4 Cups Zucchini, Shredded

  2. 2 Eggs

  3. 1/2 Cup Fresh Parmesan Cheese, Grated

  4. 1 1/3 Cup Reduced Fat Mozzarella Cheese, Divided

  5. 1 Cup Reduced Fat Cheddar Cheese, Divided

  6. 1 1/2 Pounds 90 to 94% Lean Ground Beef

  7. 1/2 Cup Onions, Chopped

  8. 1 Teaspoon Garlic, Minced

  9. 1 3/4 Cups Rao's Marinara Sauce

  10. 1 1/2 Cups Bell Peppers, Chopped

  11. 1 Ounce Pickled Jalapenos (optional)

Instructions

Preheat the oven to 400 degrees. Place shredded zucchini on a clean kitchen towel. Let it sit for thirty minutes and then squeeze out moisture. Combine zucchini, eggs, Parmesan cheese, 2/3 cup mozzarella cheese, and 1/2 cup cheddar cheese in a large bowl. Press mixture into a greased 9 X 13-inch baking dish. Bake for about twenty-five minutes. In a large skillet, cook ground beef, onions, and garlic over medium heat until meat is done. Drain liquid. Stir in marinara sauce. Pour the mixture over the baked zucchini crust. Sprinkle with remaining cheese and top with chopped peppers and jalapenos, if desired. Bake an additional twenty minutes or until heated through.


Tip:

Mozzarella cheese is low in fat and calories. This cheese is one of the healthier cheeses. Mozzarella cheese contains probiotics as well.
