  1. 1 Teaspoon Sesame Oil

  2. 1/4 Cup Scallions

  3. 2 Teaspoon Thai Kitchen Red Curry Paste

  4. 1/8 Teaspoon Garlic Powder

  5. 1/3 Cup Thai Kitchen Lite Coconut Milk

  6. 1 Teaspoon Fish Sauce

  7. 2 Tablespoon Cilantro, chopped

  8. 1 Dash Salt (optional)

  9. 18 Oz Chicken Breasts, boneless, skinless, and cubed

  10. 2.75 Cup Cooked Cauliflower, cubed


Chop the scallions and separate the whites and greens. In a large nonstick skillet, heat 1 teaspoon of oil on medium-high heat. Add scallion whites and red curry paste and saute for 1 minute. Add cubed chicken, garlic powder, and salt if desired cooking until almost done. Add coconut milk and fish sauce, and mix well. Simmer for about 2-3 minutes. Remove from heat, and mix in scallion greens and cilantro. Serve over cooked cauliflower rice. Enjoy.
