Ingredients:
4 Raw Salmon Fillets
4 Smoked Salmon Slices
1 Leek, Diced and Sauteed
1 Zucchini, Sliced
2 Tomatoes, Sliced
1 Teaspoon Dill, per fillet
Pepper to taste
Cilantro to taste
1 Lemon
1 Tablespoon Olive Oil
Red Pepper to taste
Salt to taste
Aluminum foil
Instructions
Preheat the oven to 400 degrees. Cut the white portion of the leek into several pieces and put it in a food processor until the leek is chopped up finely. After the leek is done in the food processor, put it in a pan and add one tablespoon of olive oil. Cook the leek on medium heat until it is tender. slice the zucchini thinly, you will use 1/2 a zucchini for two people and one zucchini for four people. Slice the tomatoes and lemon. Pull the skin off of the salmon before cooking. Start with the thick side and very carefully peel the skin off. On two sheets of aluminum foil put four tomato slices then place 1 salmon fillet on top of the tomatoes. 1 piece of smoked salmon on top of each fillet. Season to taste. Place 1/2 of the cooked leek on top of each. Add uncooked zucchini slices on top and around the salmon. Add dill seasoning, salt, and red pepper to taste. Add lemon on top of the salmon. Roll up and enclose up the foil. Put in the oven on the baking sheet for 15 minutes. Remove from the oven and transfer to a plate. Enjoy.
