Ingredients:
1 1/2 lbs Boneless, Skinless Chicken Breasts, Cut into Strips
1 Tablespoon Olive Oil
2 Teaspoon Chili Powder
1 1/2 Teaspoon Cumin
1/4 Teaspoon Paprika
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Salt
1 Cup Rotel Diced Tomatoes with Green Chilies, Drained
1 Cup Red Bell Pepper, Cut into Strips
1 Cup Green Bell Pepper, Cut into Strips
1 1/2 Cups Zucchini or Yellow Squash
2 Teaspoon Lime Juice, Juiced from Lime (half a Lime approximately)
Instructions
In a large bowl, combine chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, and salt. Marinate in the fridge for at least 3 hours or more if desired. Preheat the oven to 400 degrees. Spray a 13x9 baking dish with cooking spray. Add the tomatoes, peppers, zucchini, or squash to the chicken and stir until combined. Pour the mixture into the prepared baking dish. Bake uncovered for 25 minutes or until the chicken is cooked through and the vegetables are tender. Squeeze juice from half a lime over chicken and veggies before serving. Enjoy
