Mini Bell Pepper Nachos

Ingredients:

  1. 6 Mini Sweet Bell Peppers (186 grams)

  2. 1 lb 95 to 9% Lean Ground Beef

  3. 1/2 Cup Reduced Fat Sharp Cheddar Cheese

  4. 1 Tablespoon Sour Cream or 2 Tablespoon Plain Non-Fat Greek Yogurt

  5. 1 Tablespoon Guacamole or 3/4 Ounce Avocado

  6. 2 Tablespoon Green Onions, Sliced

  7. 1 Head of Lettuce of choosing (if desired)

  8. 1 Ounce Jalapenos, Sliced and Pickled (if desired)

  9. 1 Teaspoon Chili Powder

  10. 1 Teaspoon Cumin

  11. 1/2 Teaspoon Garlic Powder

  12. 1/4 Teaspoon Salt

  13. 1/4 Teaspoon Black Pepper

Instructions

First, you need to make the taco with seasoned beef. In a large skillet over medium heat, add meat and seasonings. If you want to use store-bought taco seasoning you can measure out 1 tablespoon. If you make the seasoning, that includes chili powder, cumin, garlic powder, salt, and black pepper. Cook and break up meat until cooked thoroughly for about 6 to 7 minutes. Drain meat of excess fat. Preheat the oven to 400 degrees. Cut the ends off the mini bell peppers and then cut lengthwise. Removed seeds and ribs. Place peppers on a baking sheet lined with parchment paper. arrange the peppers in a single layer, cut side up. Bake for 5 minutes. Top peppers with cooked ground beef and cheese. Bake for 7 to 8 minutes or until cheese is melted. Top with sour cream or Greek yogurt, guacamole or avocado, lettuce, green onions, and sliced jalapenos.


Tip:

While you do not want to eat beef every day, beef is a great source of nutrients and vitamins. Beef contains zinc, Vitamin B12, Vitamin B6, and iron.
