Mashed Cauliflower

Ingredients:

  1. 6 Cups Fresh Cauliflower Florets

  2. 1/2 Cup Chicken Broth

  3. 1/4 Teaspoon Salt

  4. 1/4 Teaspoon Black Pepper

  5. 2 Tablespoons Reduced Fat Parmesan Cheese

  6. 1 Tablespoon Light butter

  7. 2 Tablespoons Sour Cream

  8. 3 Tablespoons McCormick 30% Less Sodium Brown Gray Mix

  9. 3/4 Cup Water

Instructions

In a large saucepan, cover cauliflower with water. Bring to a boil over medium-high heat. Reduce heat to simmer and cover. Cook for about ten to twelve minutes or until cauliflower is tender. Drain and return back to the saucepan. Add chicken broth and mash cauliflower to the desired consistency. Stir in salt, pepper, Parmesan cheese, butter, and sour cream. Prepare gravy according to package. Top each serving of mashed cauliflower with 1/4 of brown gravy. Ready to serve.


Tip:

When you are craving those mashed potatoes, mashed cauliflower is a healthy and delicious alternative.
