Loaded Cauli Mashers

  1. 4 Slices Jennie-O Extra Lean Turkey Bacon

  2. 6 Cups Cauliflower Florets

  3. 3 Cloves Garlic, Minced

  4. 1/3 Cup 1% Buttermilk

  5. 1 Tablespoon Butter

  6. 3/4 Teaspoon Salt

  7. 1/2 Teaspoon Black Pepper

  8. 2 Tablespoon Fresh Chives

  9. 1/4 Cup Reduced-Fat Cheddar Cheese


Cook the bacon until crisp in a skillet and set aside, crumble. Boil cauliflower and minced garlic until soft which usually takes 15-20 minutes. Drain the cauliflower and minced garlic and return to pot. Preheat the oven to 350 degrees. Combine buttermilk, salt, pepper, cauliflower, garlic, and puree with blender. Mix in the 1 tablespoon of chives, transfer to casserole dish. Top with cheese, bacon and remaining chives. Bake until cheese melts which is five minutes. Enjoy.
