1 3/4 Skinless Chicken Thighs
1 Small Lemon or 2 Tablespoons Lemon Juice
2 Cloves Garlic, Minced
2 Tablespoon Fresh Oregano, Minced
1/4 Teaspoon Salt (Or Less)
1/4 Teaspoon Pepper (Or Less)
2 Pounds Asparagus, Trimmed
Preheat oven to 350 degrees. Add the chicken to a medium-sized bowl. Add the lemon juice, garlic, oregano, salt, pepper, and toss to combine. Roast chicken in the oven until it reaches an internal temperature of 165 degrees which is about 40 minutes. Once chicken thighs are cooked, remove and set aside to rest. Meanwhile, steam asparagus on the stovetop or in the microwave to the desired doneness. Serve asparagus with roasted chicken thighs.
