Kasey's Cajun Shrimp and Riced Cauliflower Skillet

We've simplified the recipe from 18 elements down to just four, making it a one-pot wonder that's perfect for a quick and easy weeknight meal.


First, let's talk about our secret weapon: McCormick's gourmet Cajun seasoning. This one little bottle replaces seven or eight different spices, making it a time-saving and delicious addition to any recipe. We used about half the bottle for this dish, which serves four, so if you want to make it more than once, we suggest getting a bigger supply.


Next up, the riced cauliflower. This is a great alternative to traditional rice, as it's actually vegetables that have been riced up. We recommend using organic and low-sodium options to keep it healthy. And don't worry about ricing it yourself – we just grabbed a few bags from the store and we were good to go!


To add some healthy fats to the dish, we're using avocado and olive oil. And speaking of avocados, we've got a little trick up our sleeves for you. You'll have to watch the episode to find out what it is!


Finally, we're using vegetable broth to season the cauliflower. This is a great way to add flavor to a vegetable that doesn't have much taste on its own. And with all of our ingredients prepped, it's time to get cooking.


The beauty of this dish is that everything goes into one pot, making clean-up a breeze. We start by sautéing the riced cauliflower with some olive oil, then adding in the vegetable broth and Cajun seasoning. Once it's simmered for a bit, we add in the shrimp and let it cook until it's pink and delicious.

Ingredients:

  1. 2 pounds cooked large shrimp, peeled and deveined

  2. 3 bags (2 1/2 cups per bag) Birds Eye savory herb riced cauliflower

  3. 2 cups vegetable broth

  4. 4 Tablespoons olive oil

  5. 4 Tablespoons McCormick's gourmet Cajun seasoning

Instructions

Combine the cauliflower rice and half of the Cajun seasoning with half of the olive oil in a large skillet over medium heat. Stir in vegetable broth sufficient to cover the cauliflower. Bring to a boil, reduce to a simmer, and cover. Cook for 15 minutes, stirring 1-2 times throughout. While the cauliflower is cooking, prepare the shrimp by stirring together the remaining olive oil and Cajun seasoning. Pour over shrimp and toss to coat. Stir the shrimp into the cauliflower, cover and cook 3-5 minutes longer and serve.


Tip:

This dish is a great option if you want to stay healthy while still getting your shrimp fix.
