Kasey's Cajun Shrimp and Riced Cauliflower Skillet

Ingredients:

  1. 2 Pounds Cooked Large Shrimp, peeled and de-veined

  2. 3 Bags (2 1/2 Cups per bag) Bird's Eye Savory Herb Riced Cauliflower

  3. 2 Cups Vegetable Broth

  4. 4 Tablespoons Olive Oil

  5. 4 Tablespoons McCormick's Gourmet Cajun Seasoning

Instructions

Combine the cauliflower rice and half of the Cajun seasoning with half of the olive oil in a large skillet over medium heat. Stir in vegetable broth sufficient to cover the cauliflower. Bring to a boil, reduce to a simmer, and cover. Cook for 15 minutes, stirring 1-2 times throughout. While cauliflower is cooking, prepare the shrimp by stirring together the remaining olive oil and Cajun seasoning. Pour over shrimp and toss to coat. Stir shrimp into the cauliflower, cover and cook 3-5 minutes longer and serve.


Tip:

This dish is a great option if you want to stay healthy, but still, get your shrimp fix.
