Kale, Tomato & Goat Cheese Egg Muffins

Ingredients:

  1. 9 Eggs

  2. 1 Cup Liquid Egg Whites

  3. 3/4 Cup Plain Low-Fat Greek Yogurt

  4. 2 Ounces Goat Cheese, Crumbled

  5. 1/2 Teaspoon Salt

  6. 1 10-Ounce Package Frozen, Chopped Kale, Thawed and Patted Dry

  7. 2 Cups Cherry Tomatoes, Chopped

  8. Cooking Spray

Instructions

Preheat the oven to 375 degrees. Whisk together the eggs, egg whites, Greek yogurt, goat cheese, and salt in a large bowl, until well mixed. Stir in the kale and cherry tomatoes. Divide the mixture evenly among 20 to 24 slots of two, standard-size, lightly-greased muffin tins. Bake for twenty to twenty-five minutes, until set in the middle and a knife inserted into the center comes out clean.
