Ground Beef Cauliflower Hash

Ingredients:

  1. 2 1/2 Cup Frozen Cauliflower, Defrosted, Drained, and Chopped

  2. 1/2 Cup Bell Peppers of your choice, Chopped

  3. 1/4 Cup Onion

  4. 14 Ounces 93% Lean Ground Beef (10 ounces cooked)

  5. 2 Cups Reduced Fat Sharp Cheddar Cheese

  6. 3/4 Teaspoon Garlic Powder

  7. 3/4 Teaspoon Salt, use less if desired

  8. 1/4 Teaspoon Black Pepper

Instructions

Spray a large skillet with olive oil cooking spray and heat over medium-high heat. Add onions and peppers. Then cook until onions are translucent and peppers are tender for about three to four minutes. Add ground beef and cook until cooked through. Add cauliflower, garlic, salt, and pepper. Cook until cauliflower is tender. Add cheddar cheese on top of the cauliflower and beef mixture. Turn heat to low, cover the pan with a lid and allow the cheese to melt. Enjoy.


Tip:

Cauliflower is packed with nutrients and can be used to replace grains and legumes in your diet. Cauliflower is lower in carbs than grains and legumes.
