Green Bean Casserole

Ingredients:

  1. 16 Oz Frozen Green Beans

  2. 2 Cups Button Mushrooms, Chopped

  3. 1 Clove Garlic, Minced

  4. 1/4 Cup Yellow Onion, Diced

  5. 3/4 Cup Plain Non-Fat Greek Yogurt

  6. 1/4 Cup Light Sour Cream

  7. 1 Teaspoon Cornstarch

  8. 1/2 Packet Stevia

  9. 1/2 Teaspoon Salt

  10. 1/2 Teaspoon Pepper

  11. 1/2 Cup Reduced-Fat Cheddar Cheese, Shredded

  12. Parmesan Cheese

Instructions

Preheat oven to 350 degrees. Microwave green beans according to package directions. Lightly grease medium sized skillet and cook onions, garlic and mushrooms over medium heat for about 5-7 minutes. Combine cooked mixture with green beans in medium sized bowl and let cool. Combine Greek yogurt, sour cream, cornstarch, stevia, salt, and pepper in a small bowl. Toss vegetables in sauce mixture until evenly coated. Add cheddar cheese, and mix until well combined. Spread into a lightly-greased baking dish, top with Parmesan Cheese, and bake until topping is golden brown for about 30-35 minutes.


Tip:

Green Beans is one of the best vegetables to use. It is packed with nutrients and easy to spice up.
