Chicken with Mushroom Cream Sauce

Ingredients:

  1. 8 Ounces Of Raw Chicken Breasts

  2. 1/4 Teaspoon Salt

  3. 1/8 Teaspoon Pepper

  4. 1/4 Teaspoon Garlic Powder

  5. Cooking Spray

  6. 1/2 Cup Crimini Mushrooms

  7. 1 Scallion, Thinly Sliced

  8. 1/2 Cup Lower-Sodium chicken Broth

  9. 2 Tablespoons Reduced-Fat Cream Cheese

  10. 1/2 Tablespoons Fresh Rosemary or Parsley, Chopped

  11. Dash Of Salt

Instructions

Spray a large non-stick skillet with cooking spray. Season the chicken with salt, pepper, and garlic powder. Add the chicken and cook until golden brown for about three minutes on each side. Transfer to plate and tent lightly with foil to keep warm. Spray pan with cooking spray and add the mushrooms. Cook over medium-high heat turning once, until the mushrooms are nicely browned for about three minutes. Add the broth, cream cheese, salt, and rosemary or parsley. Whisk until the cheese melts which is about one minute. Test for seasoning and add a dash of salt. Return the chicken to the pan. Bring to a simmer and reduce to a creamy consistency. Add the scallion and stir. Plate the sauce and top with chicken. If you wish you may cook your favorite vegetable to serve with the chicken.
