Chicken Alfredo

Ingredients:

  1. 4 Ounces Grilled or Baked Chicken, sliced or diced

  2. 1 1/2 Cups Yellow Squash And/Or Zucchini, Spiralized

  3. 1 Teaspoon Olive Oil

  4. 1/4 Teaspoon Dried Basil

  5. 1/2 Cup 1% Cottage Cheese

  6. 1/8 Teaspoon Salt

  7. 1/2 Teaspoon Garlic Powder

  8. 1 Tablespoon Reduced Fat Parmesan Cheese, Grated

  9. 1 Tablespoon Unsweetened Almond Milk

  10. 1/8 Teaspoon Fresh Ground Pepper

Instructions

Prepare your squash. You can peel your squash so that it resembles pasta. Decide which gadget you want to use to make the noodles and measure out 1 1/2 cups. Add Olive oil to a medium skillet over medium-high heat. Add spiralized squash to the oil and cook until squash gets tender for about two minutes. Add basil and any other additional seasonings such as salt, pepper, and garlic powder. Put on a plate and set aside. Next, make the Alfredo sauce. In a small blender, combine cottage cheese, salt, garlic powder, Parmesan cheese, almond milk, and pepper until the mixture is smooth and creamy. Pour into a microwave-safe dish and heat until warm, stopping the microwave every fifteen seconds to stir. Make sure the cottage cheese doesn't get too hot, because cottage cheese and heat do not mix well. Place cooked diced chicken over squash noodles, and then pour warm sauce on top.


Tip:

Zucchini noodles are a delicious and healthy alternative to pasta. Zucchini is full of nutrients including vitamins, minerals, and antioxidants.
