Cauliflower Rice Casserole

Ingredients:

  1. 2 1/2 Cups Riced Cauliflower, Frozen

  2. 1/2 Cup Mild Rotel Diced Tomatoes

  3. 1/4 Cup Salsa

  4. 1/8 Teaspoon Salt

  5. 1/8 Teaspoon Pepper

  6. 1 Cup Reduced Fat Mexican Cheese, Grated

  7. 9 Oz Chicken Breasts, Chopped

  8. 1/2 Teaspoon Low Sodium McCormick's Taco Seasoning

  9. 1 Teaspoon Olive Oil

Instructions

Season chicken with taco seasoning and toss with olive oil. Marinate for at least 4 hours. In a large bowl, combine grated cauliflower, Rotel tomatoes, salsa, salt, pepper, and garlic powder. Grill, bake, or broil the chicken. Set aside. Pour riced Cauliflower into a casserole dish. The casserole dish can be a 9-inch pie plate or cast iron. Layer with chicken and then cover with cheese. Bake at 350°F for twenty-five minutes or until cheese is melted. To serve, cut the casserole in half and plate. Cheese It Up!

Cauliflower is high in fiber and contains a good source of antioxidants. Cauliflower is a low-carbohydrate alternative to grains and legumes. Cauliflower is a healthy and delicious vegetable to add to your dishes.
