Hey there, it's Kevin from Brothers' Bistro! We're always up for a culinary adventure, and today we're tackling a wild idea - grilled cheese with cauliflower rice as the bread! Yup, you heard that right. We're pushing the boundaries of comfort food and taking you along for the ride. But first, we've already been busy being heroes, helping a damsel in distress find her lost wallet. Now, it's time to get cookin'!


Ingredients? Check. Parmesan cheese grated with our own mighty muscles? Check. Medium cheddar cheese, because low-fat is for quitters? Check. Cauliflower rice all set to go? Check. Let's do this!


We're mixing up our cauliflower rice with Parmesan cheese and a pinch of salt (optional) to create our "bread." Then it's off to the oven at a blazing 425 degrees for about 30 minutes, or until it's golden brown and crispy. Our taste buds are tingling with anticipation!

Ingredients:

  1. 6 Cups Cauliflower Rice

  2. 3 Large Eggs

  3. 2 Tablespoon Parmesan Cheese, Grated

  4. 1/4 Teaspoon Salt (optional)

  5. 12 (1-oz) Reduced-Fat Cheddar Cheese Slices

Instructions

Preheat the oven to 425°F. Spread the cauliflower on a baking sheet lined with parchment paper and baked for 30 minutes until golden brown. Remove from the oven and allow it to cool. Reduce the heat to 400°F. In a kitchen towel, squeeze the cauliflower to remove the excess moisture. Mix together the cauliflower with the eggs, Parmesan, and salt. Scoop 1/3 cup of the cauliflower mix onto a section of the parchment-lined sheet pan and shape it into a bread slice, about 1/4-inch thick. Repeat 7 times for a total of 8 cauliflower "bread" slices. Bake the cauliflower "bread" at 400°F for 8 minutes. Remove from the oven, top, one cauliflower "bread" slice with 3 slices of cheddar cheese, and then place another cauliflower slice on top. Repeat 3 times for a total of 4 grilled cheese sandwiches. Return the sheet pan to the oven and cook until the cheese is melted. Cheese it up! Enjoy!
