BBQ Chicken & Ranch Broccoli Salad

  1. 4 6 Oz Boneless Chicken Breasts, Raw

  2. 1 Tablespoon BBQ Seasoning

  3. 6 Cups Broccoli Florets

  4. 3/4 Cup Reduced-Fat Greek Yogurt

  5. 2 Tablespoon Regular Mayo

  6. 1 Tablespoon Homemade Ranch Seasoning

  7. 2 Tablespoon Parsley, Dried

  8. 1 Tablespoon Dill, Dried

  9. 1 Tablespoon Chives, Dried

  10. 1 Tablespoon Garlic Powder

  11. 1 Tablespoon Onion Powder

  12. 2 Teaspoon Salt

  13. 1 Teaspoon Black Pepper


Preheat grill. Pound chicken to even thickiness, and season with BBQ seasoning. Grill chicken until internal temperature of 165 degrees, about 4 to 6 minutes per side depending on thickness. To make homemade ranch seasoning: in a spice grinder, combine all of the dried herbs and spices and pulse 5 to 7 times to enhance the taste and texture of the seasoning mix. Alternatively, you can mix all of the dried herbs and spices in a bowl. Store in an air-tight container until ready to use. In a large bowl, combine the broccoli, yogurt, mayo, and ranch seasoning. Toss well. Each serving should have 6 ounces of cooked chicken and 1 1/2 cups of broccoli salad.
