Avocado Cauliflower Rice

Ingredients:

  1. 1 1/2 Ounces Avocado

  2. 2 Teaspoons Fresh Lime Juice

  3. 1/8 Teaspoon Garlic Powder

  4. 1/4 Teaspoon Salt

  5. 1/4 Cup Chopped Cilantro

  6. 1 Teaspoon Olive Oil

  7. 1 1/2 Cups Raw Grated Cauliflower

Instructions

In a small bowl, mash avocado with a fork. Add lime juice, garlic powder, salt, and cilantro. Stir until combined. Continue mashing to get the mixture as smooth as possible. Set aside for later. Add 1 teaspoon oil to a medium-sized skillet and heat over medium heat. Add grated cauliflower. Cover the skillet with a lid so that the cauliflower steams and becomes tender. Cook for about 5 to 8 minutes stirring occasionally. Add avocado mixture to the cauliflower. Mix until cauliflower is evenly coated. Make sure you heat thoroughly.


Tip:


This is a great alternative to rice. Remember Avocado is a great source of vitamins and omega-3 fatty acids.
