Cloud Bread

Ingredients:

  1. 3 Eggs

  2. 3 Tablespoons of Plain (unflavored) 2% Greek Yogurt

  3. 1/4 Teaspoon Baking Powder

Instructions

Preheat oven to 300 degrees. Separate the egg whites from the egg yolks using the water bottle technique. Place the egg whites in a larger bowl. Place the egg yolks in a smaller bowl. Combine the baking powder with the egg whites in the larger bowl. Combine the Greek yogurt with the egg yolks in a smaller bowl. Using a hand blender, blend the egg yolks and Greek yogurt on a low setting. Rinse the beaters thoroughly to remove all the egg yolk. The egg whites won't stiffen and peak if the egg yolks are mixed in. Using a hand blender, blend the egg whites and baking powder on a high setting. Beat until stiff peaks form when you removed the blender from the mixture. Fold the egg yolk mixture into the egg white mixture. Be careful not to over mix, it's normal to have a little egg yolk liquid at the bottom. Scoop mixture out and place on Silpat lined cookie sheet. If not Silpat, spray liberally with coconut or olive oil. Bake at 300 degrees for 25 to 30 minutes until golden brown.


Tip:

This is a healthy alternative to bread. Cloud bread is low carb and easy to make. This recipe does not require, but is easier if you have a Cuisinart hand mixer and Silpat premium non-stick food-safe baking mat.
