Ingredients:
6 Cups Yellow Squash, Diced
2 Tablespoons Olive Oil
1 Teaspoon Salt
3/4 lb. White Meat Chicken, Cooked & Shredded
4 Tablespoons Reduced-Fat Blue Cheese Crumbles
2 Tablespoons Scallion, Minced
4 Cups Liquid Egg Substitute
Instructions
Preheat oven to 450⁰F. Toss the diced squash with salt and olive oil. Spread it on a sheet pan. Roast the squash for fifteen to twenty minutes until slightly caramelized. Reduce heat to 425⁰F. In a bowl, combine the roasted squash with the chicken, blue cheese, and scallions. Place an equal amount of squash-chicken mixture into 16 indentations into non-stick muffin pans, and then fill the indentations up with liquid egg substitute. Bake at 425⁰F for fifteen minutes. Remove the frittatas from the pan, and serve warm.
Tip:
Squash is a healthy vegetable to add to your meals. The antioxidants in squash can actually play an important role in reducing oxidative stress which then can help with cancer prevention.
